Steamed mussels soup – A piquant seafood starter

Ingredients

  • 500 g mussels in shells

  • 50 g shallots or onions, chopped finely

  • ½ bunch parsley

  • 1 ml pepper

  • 200 ml white wine

  • 50 g butter

  • salt to taste

  • lemon juice to taste

  • 100 ml cream

  • toasted French loaf slices for serving with the soup

Method

  • Scrub the mussels well with a stiff brush and remove the beards.
  • Clean them well by soaking them.
  • Place the mussels in a stockpot or large saucepot, add the shallot or onion, parsley, pepper and wine.
    Cover the pot and set it over moderately high heat.
  • Add the cream and butter, swirl the liquid in the pan until the butter is melted, season to taste with salt and a few drops of lemon juice.
  • To serve, remove the top shells of the mussels, place the mussels in a broad soup plate and pour the sauce over.
